experience
last jobs infos
questions based on his resume info
recipes and beverage knowledge depending on bev available on bar/restaurant
inventory/ bar & cost control ...%
interpersonal and communication skills
thats what I would test in a candidate to a bartending position vacancy, and if I was really needing a really good bartender(more expensive) to finish I would drill him with some previous month bar p&l, bev costs%, menu analysis and make he sing to me the analysis, goals to improve etc..
