anyone can guide me for how to calculate for restaurant occupancy ?, i have enthusiam in F&B operation and want to understand F&B professional knowledge ! appreciate

there really isn't an "occupancy" for restaurantes. Its normally meassured by covers and average check. You could do an occupancy based on coveres divided by [the total seats times serving hours divded by average turn]. -dave

Dayv is right and another way to look at it is to take the surface of the restaurant and divide it by daily total f&b sales it will give you the average spent per square meter, the retail industry uses it to measure their performances, its easier to compare outlets performance against each other

well while its correct what all the others say. Some places, specially the more busy ones also work with turnover numbers. like you have 60 seats and manage 90 covers (to make it simple) its a turnover of 1.5.

Turnover is the right concept to measure restaurant occupancy. Chef is Right. It is aboslutely unprecised to measure it by % since you don't know the time guests are staying at one table. Cheers AR

Million; You might want to start collecting your daily data for a while and understand how many covers you do daily on a shift basis. With that on hands, you can establish what we call the "capture ratio" which is a relation% of covers compared to how many rooms occupied. That works very well for the breakfast shift in particular since your business is primarily in house, as it is the case for most hotels, not too much outside traffic based upon the property's location.
