When I wrote EngageMe last year, it was a declaration of how customers would like to be served. This was regardless if they happened to be in a hospital, hotel, spa, bank, law office, travel agency, or a taxi. The declaration was clear. If you take care of your customers, value their patronage, and provide them with memorable service, then they will return to give you more business. Simple enough. In my quest to help organizations become more service-centric, I've outlined 7 Principles, which are the key learning points from EngageMe...the voice of your customer. They are... By: Bryan K. What an ironic paradox! There is such an abundance of capital seeking hotel investment. And at the same time, more hotel owners are frustrated in their efforts to find that very capital. Why can't the two find one another? Because the capital market "machinery" that used to match up the hotel lenders and equity sources with borrowers, is broken -- or at least "out of service" for an undetermined time. By Jim Butler

Italian food-far more than French cuisine-has conquered the world. So much so, you're as likely to find an upscale ristorante, a homey trattoria and a score of pizzerias in Munich, Osaka, Buenos Aires and Moscow as in Florence, Rome, Venice and Naples. But because of the enormous wave of Southern Italian immigrants who came to the U.S. starting in 1880, America developed an early, unique Italian-American cookery that has, in many ways, become the standard for restaurants around the world. Dishes like chicken parmigiana, spaghetti with clams and veal Valdostana are now staples everywhere. By John Mariani
